Being a Bong by birth, if any cuisine I like after Bengali cuicine,this will be Punjabi food for sure. I can live on Punjabi food for many days. As much as Bengali food is comfortin for me, Punjabi food as well. So quite often I use to make Punjabi thali for our daily consumption. And most of the time I prepare Punjabi veg thali, because I love Punjabi veg food very much. But this time thought of making Punjabi Chicken thali with Dhaba Chicken. Dhaba style chicken will be the hightlight of the thali.

This thali contains

  • Butter roti
  • Jeera rice
  • Tandoori gobi fry
  • Dal makhani
  • Dhaba style chicken curry
  • Semiyan kheer

Dhaba style chicken surrey is the highlight of this punjabi chicken thali.

Butter roti


Roti/phulka as many as you need' Butter 1 teaspoon for each roti

Steps to prepare

  • Take 1 teaspoon butter and melt on tawa, place each roti on the melted butter and lightly fry. Take them and store in a cassarole.

Tandoori gobi fry


  • Small gobi florates 15 pieces, blanched in boiled salted water
  • Curd 2 tablespoons
  • Lemon juice 1 lemon
  • Grated ginger & garlic 2 tablespoons
  • Tandoori masala 2 teaspoons
  • Red chili powder 1/2 teaspoon
  • Turmeric 1/2 teaspoon
  • Garam masala powder 1/2 teaspoon
  • Kasoori methi 2 teaspoons
  • Salt to taste
  • Oil for frying

Steps to prepare

  • Take the blanched gobi and strain well. Take a large bowl, add curd, lemon juice, grated ginger & garlic, tandoori masala powder, red chili powder, turmeric powder, garam masala powder, salt & kasoori methi and mix well with a fork.
  • Now marinate the blached gobi in the curd mixture and keep aside for 1 hour.
  • After 1 hour, heat oil in a pan and fry the marinated gobi in the hot oil. If you don't want to fry, you may grill them on grilling pan.

Dhaba style chicken curry


  • For marinate the chicken:
  • Chicken bone-in pieces 500 gams
  • Ginger 1" long piece
  • Garlic 6 pods
  • Onion 1 small
  • Green chili 2
  • Curd 2 tablespoon
  • Lemon juice 1 lemon
  • Turmeric 1/2 teaspoon
  • Red chili powder 1/2 teaspoon
  • For the curry :
  • Mustard oil 2 tablespoons
  • Ghee 1 teaspoon
  • Bay leaf 1 large
  • Red chili whole 1
  • Cinnamon stick 1
  • Cloves 2, crushed
  • Green cardamom 2, crushed
  • Onion 1, finely chopped
  • Cumin powder 1 teaspoon
  • Coriander powder 1 teaspoon
  • Salt to taste
  • For smokey flavore :
  • Charcoal 1
  • Ghee 1/2 spoon

Steps to prepare

  • Take the chicken, wash under tap water, rinse well. Take a bowl, add all the ingredients under the heading "marinate" in it, mix well and marinate the chicken pieces.
  • Keep aside for 4 hours or over night.
  • Now after 4 hours, heat oil & ghee in a pan, temper with cinnamon, clove, cardamom, bay leaf & whole red chili, fry till fragrance comes. Fry the onion till golden in color, add marinated chicken pieces along with the marination. And fry everything for 2 minutes.
  • Now cover the pan and let the chicken cook for 10 minutes on low flame.
  • After 10 minutes higher the heat and let the excess water to evaporate.
  • Now add 1 cup warm water to the chicken and put everything in to a pressure cooker, and pressure cook till 2 to 3 whistles. The number of whistles may vary on locality.
  • Let realese the pressure itself. Now open the cooker and keep aside.
  • Now burn a charcoal, place the burnt charcoal in a small bowl and put the bowl in the cooker, add 1/2 teaspoon ghee on the burnt charcoal and it will start creating smoke. So cover the cooker and let it as it is for 5 minutes.

Notes :

Arrange the items as per your choice and serve hot with some sliced onion and achar.
