Bhat Bhaja was one of my favorite breakfast in childhood. I was very choosy about my food habits. And most of the time it's being boring having Bread & Butter almost every morning. So whenever there would be some leftover rice, my mom always used to make "Bhat Bhaja" for me. I just loved it. My mom is just an "Angel" to me. she used to take only few minutes to make my favorite breakfast.
Bhat means rice, and bhaja means fry. Almost in every household, there must be some leftover rice at home. And we have to eat the rice with no taste. My mom used to make this leftover rice even more tasty in 10 minutes. Bhat bhaja is nothing but fried rice. But there is a twist, this fried rice is not the fancy one. This is a very simple dish, just tossed with some fried potato and onion and seasoned with turmeric, salt and sugar. Bhat bhaja is a very common Bengali breakfast item in middle class Bengali family. It's filling, tasty and healthy too. So I'm giving you the magic trick of my mom to enjoy the leftover rice as breakfast.

Ingredients for Bhat Bhaja
Preperation steps for Bhat Bhaja
Take a pan and heat oil. Add the peanuts and fry them. Take the fried peanuts out of the pan and keep aside.
In the same oil add chopped chilies and fry for few seconds.
Now add the chopped onion and fry till onion becomes light brown. Add chopped potato and some salt, turmeric & chilli powder and cover for 2 minutes to cook the potatoes.
When the potatoes became tender add the leftover rice, fried peanuts and some sugar and mix with the veggies for 2-3 minutes and serve hot.
You can make this dish in 2 tablespoons of Butter also.

Serving Tips
Serve bhat bhaja as it is, it doesn't need any side dish.
Notes
If you want you can add any Chopped Vegetables, some fried Prawns and some Curry leaves to it.
