Eggless Banana Muffins

Eggless banana muffins are a great way to incorporate the goodness of bananas into your diet. Bananas are rich in potassium, carbohydrates, dietary fiber, Vitamin C, Vitamin B6, magnesium, Vitamin A and iron.

Since the temperature has again started rising these days we end up having a lot of over ripe bananas. I wish bananas lasted as long as apples did.& But they don't. They insist on ripening, darkening, and mushing faster than they should. So I have been freezing sliced bananas to prepare smoothies and milkshakes and have also been baking with it. Several times I threw the very ripe bananas that were browned on the outside and too pulpy on the inside to consume. Then I learned a little late that the ripe, soft bananas are perfect for making Banana Walnut Muffins. I tried a couple of recipes including the chocolate banana cake, quick whole wheat banana pancakes and a banana muffin recipe. Actually it came out well and tasted pretty good. Eggless banana muffins are a great way to incorporate the goodness of bananas into your diet. Bananas are rich in potassium, carbohydrates, dietary fiber, Vitamin C, Vitamin B6, magnesium, Vitamin A and iron. This recipe is really easy to follow and can be prepared within no time. These can be packed in the kids snack box too as the taste of banana will make the child eat these muffins. This time my kiddo who is very enthusiastic in cooking and baking, wanted to bake this muffins all by himself. So I did encourage him for the whole process and he did his best to make these beautiful and tasty muffins for his lunch box.

Ingredients for Eggless Banana Muffins


Preperation steps for Eggless Banana Muffins

  Take the sugar and cinnamon stick in a dry grinding bowl, grind together for a minute.

  Take the banana and the curd in a blending bowl and blend it till the banana got totally mashed.

  Now add this banana curd mixture in a bowl.

  In the same bowl, add atta, baking soda and baking powder, sugar cinnamon stick powder and mix everything with a hand mixer for 1 minute.

  Now add oil and vanilla essence to the mixture and mix for sometime.

  Now add the Choco chips, but if you don't want just skip this step.

  Now preheat the oven at 180 degree for 5 minutes.

  Pour the muffin mixture in cupcake molds, tap for 30 seconds.

  Put the cupcake or muffin molds with the batter inside the oven for 29 minutes to bake or until done.

  Remove from the oven when the muffins are done, keep at room temperature till the muffins cool down completely.

  Enjoy the healthy muffins anytime.

Serving Tips

Serve the muffins warm, then only the muffins tastes best. if you want you can drizzle some chocolate sauce on the top before serve.

Notes

  • Atta can be replaced by oats flour. For that, you need dry roast same amount of instant oats and then grind it to make fine powder. 
  • You can avoid choco chips if you don't want. 
  • You can add chopped walnuts on the top before baking.
