Dimer Khichuri

Dimer khichuri is absolute life savior one pot meal by my Mother. I'm a true lover of any kind of Khichuri( it's Bengali khichuri not khichdi). So she knows my choice of favorite meal. Whenever she has not much time to prepare a good meal, makes this for me. She makes with an ease, no grinding, not much effort she does, just few handful of ingredients and 30 minutes only she takes to make it and serve. In my childhood when it's winter night or heavy raining outside, just asked me if I wish to have 'Dimer Khichuri' or not and my answer was always yes. Today it's also heavily raining outside and hubby is not at home, he went for a conference at early morning, it's me and my son only. So thought of making quick lunch with 'Dimer Khichuri' so we both can have this. So here is the result. Quickly check out the recipe below.

Why it's called Dimer khichuri?

Khichuri is a popular and very common one pot Indian meal. Khichuri or khichdi means hotchpotch in English. In khichuri or khichdi any kind if dal can be used. But one common ingredient is rice. But nowadays rice is also can replaced by oats, quinoa or even millets. But I'm rice khichuri person. Oh why am I writing 'Khichuri', because we Bengalis call it khichuri, and our khichuri tastes also little different than khichdi. We mostly cook khichuri with moong dal, but sometime we cook it with masoor dal or red lentil also. And in that masoor dal wala khichuri we add onion, garlic too. And my mother add omelette at the end to make it even more tastier. That's why we call this dimer khichuri or anda khichdi.

Ingredients for Dimer Khichuri


Preperation steps for Dimer Khichuri

  Take a pressure cooker, add rice dal salt turmeric cumin powder and 2 cups of water, pressure cook up to 2 to 3 whistles and keep aside.

  In the meantime heat mustard oil in a wok, add broken chili, grated ginger & garlic and fry for 2 to 3 seconds, now add chopped onion and fry again. Add tomato and cover the pan to make the tomato soft and lower the heat for 30 seconds. Uncover the wok, you will see the tomatoes are soften now. Fry everything for few seconds.

  Now open the cooker and add the boiled dal n rice into the wok, add some warm water too and cook covered for 10 minutes.

  After 10 minutes open the cover add the omelette you made earlier and boil with the khichuri for 2 to 3 minutes. Check the salt, add if needed. You may add sugar, but I don't.

  Serve immediately.Enjoy.......................
