Everyone is posting the rich Christmas fruit cake today. But I'm going to post my favorite tea time cake which is made in a healthy way, delicious in taste but easy to make.  I used egg whites in this cake to make this more healthy, dates, chopped walnuts & dried cranberry and one secreat ingredient to enhance the flavor of this wonderful cake. That is "Indian Tea Spices" Or "Chai Masala", which is used to make "Masala Chai" in India. I used store bought "Chai Masala", which is easily available in any grocery stores in market. If you can't find it, then make it at home with, 2 cloves, 1 cinnamon stick, 2 green cardamom pods, pinch f nutmeg powder, 1/4 teaspoon ginger powder or grated ginger.

Preperation steps for Indian Tea Cake

  Take the egg whites in a medium size bowl and beat it with hand or electric beater till the egg whites become foam.Add butter in to it and beat to mix them well.Now in another bowl take All purpose flour, baking powder, sugar & tea masala and mix with a spatula, add the chopped dried fruits & nuts to the flour mixture.Now gently pour all the flour mixture into the egg white mixture. Mix all together very gently to make a smooth flawless batter. Make sure there is no lumps.Preheat the oven to 375 F OR 180C.Prepare a loaf pan by greasing butter and sprinkling flour into it. Pour the batter into the pan and put inside the preheated oven for 30 minutes.After putting the pan, lower the temperature to 350 F Or 175 C. After 30 minutes insert a clean knife at the center of the cake , if the knife comes clean the cake is ready.If not then keep the pan again for 10 minutes. You have to check in every 5 minutes. When the cake is done, let it cool down completely, before removing it from the pan.Remove the cake, make your desirable slice and serve with hot cup of tea/coffee... Enjoy.
